What does "gluten-free" actually mean for beer?
Gluten is a collective term for certain protein components found in wheat, rye, and barley, among others. Since barley malt is one of the classic foundations of brewing beer, conventional beer normally contains gluten.
The term "gluten-free" is clearly regulated in the European Union: A food product may carry this label if it contains a maximum of 20 mg of gluten per kilogram in its ready-to-sell state.

At the same time, NILIO relies on precise control of the entire fermentation process when brewing its non-alcoholic beers. Yeast selection, temperature, sugar concentration, as well as other parameters such as pressure and pH value are tuned so that very little alcohol is produced while as much of the original beer character as possible is preserved.
